A new era of contemporary British cuisine from talented chef Kirk Westaway
From the succulent Da Lat organic tomatoes, combined with a sauce made according to a unique recipe, to the cool mint ice cream and the characteristic aroma of basil leaves. All blend together to bring diners into a unique culinary experience.
Chef Kirk and his partner Chris worked together to create a menu honoring the quintessence of British cuisine in Vietnam. Diners are surprised with creative preparations, variations on classic dishes such as strawberries and cream, grilled chicken and thyme; and of course the famous “fish & chips” dish of England.
Besides, grilled chicken is served with mashed potatoes, salad, charred corn and chicken sauce with the characteristic aroma of thyme.
These scallops are grilled on a Josper grill using Japanese charcoal, creating a unique smoky flavor. The base underneath is a perfect combination of grilled leeks and fresh salted lemon. And to complete the dish, chef Kirk sprinkles it with rich bacon sauce, promising an unforgettable aftertaste!

Chef Christian Le Squer continues his culinary journey at La Maison 1888 by bringing the restaurant’s classic French cuisine to a new level combining with the quintessence of Vietnamese cuisine. Dining Saigon with unique chef Peter Cuong Franklin
