Hibana by Koki – the only Japanese cuisine in Vietnam to receive stars Michelin 2024
This honor is probably due to the unique Teppanyaki (hot table cooking) style at Hibana. Hibana is run by Chef Yamaguchi. His culinary creations are not only visually impressive, but also excellently “pamper” the taste buds of diners, reflecting the harmonious combination of umami (the fifth taste), kansha (deep respect for ingredients) and omotenashi (the art of Japanese hospitality).
In a rustic yet sophisticated space with warm brown tones, in front of the teppan table, diners will be led into the “emotional house”, to wait with the Japanese chef for dishes made from fresh ingredients of the highest quality. Premium Yaeyama Kyori beef is meticulously prepared on the teppan table, at low temperature, for nearly an hour, to create a rich “umami” flavor, full of nostalgia when enjoyed. In addition, sea bass from the Sea of Japan or hairy crab from the cold waters of Hokkaido…, the ingredients used at Koki are also not easily found in famous restaurants around the world.
The restaurants selected by Michelin this year are expected by many to contribute to raising the position of Vietnamese cuisine and tourism on the international map.
